Cake Fail and a BBQ

So I saw this easy cake recipe online and wanted to try it out. I'm not even sure what it's called, but I call it Pineapple Angel Food Cake. Here are the only two ingredients you'll need...



Yep, that's it...a box of angel food cake mix and a 20 oz. can of crushed pineapple (with juice)

Here's the deal, it's supposedly fat free since there's no fat in the cake mix or the pineapple and it couldn't be easier, so I thought "Why not?" 

Everything started out on a good note. I mixed up the two ingredients and poured it into an un-greased 9x13 pan. The recipe was very specific about leaving the pan un-greased. I'm assuming that's because when working with egg whites (which is pretty much the main ingredient in angel food cake) you have to make sure your beaters, spoons, bowls, etc. are grease free or it will alter the outcome)


Right before going into the oven. (i.e...right before my hopes were dashed)

So, I mixed it up, poured it into the un-greased 9x13 and baked it at 350 degrees for about 36 minutes. It was absolutely beautiful when it came out of the oven, but here's where things started to go south.

Several online recipes said to cool the pan upside down (by propping it up on two upside down loaf pans) immediately after removing from the oven. Seriously??? That really didn't sound right to me, but they showed pics of their 9x13 pan cooling upside down right after taking it out of the oven and everything. Hmm...I know you do that with a regular angel food cake that's made in an angel food cake pan, but it didn't sound right to do it with a 9x13 and it certainly didn't sound right when adding pineapple because now it would be kind of heavy. 

They even went on to say "Be sure to cool your 9x13 pan upside down immediately, or your cake will sink in the middle." Well, who wants that? So I did as told and, well...




Just as I thought, it fell apart immediately after turning it upside down. Should have listened to my gut instinct, which is usually correct. I'm sure our lovely humidity had something to do with it too. 

But on the bright side, it was still edible. We just had to scoop it into bowls instead of cutting it into squares. And here's the thing...it was delicious!!! Like, better than I expected. Really moist and yummy. 

So, I'll definitely make this again, I just won't turn it upside down. I mean, I would rather have a dent in the middle than a total mess. Ha! 

So, if you dare...here's the recipe:

One box Angel Food cake mix
One 20 oz. can crushed pineapple (with juice)

*Make sure to get the kind of angel food cake mix that you only have to add water to, like the one in the pic above.

Mix together and pour into an un-greased 9x13 pan. Bake at 350 for 32-38 minutes. Cool on a wire rack. Cut into squares and enjoy as is or add sliced strawberries and cool whip. 

UPDATE:

I did make this again and this time it turned out beautifully!

We're talking fall off the bone ribs, people! Yum!

  2. I made that cake a couple of weeks ago! Did I get the idea from you? We loved it. The pineapple really adds to the taste and texture. The ribs look amazing.

  6. Oh my gosh my mouth is watering! That cake looks good. I love angel food cake and pineapple. So glad you got one to work for you. The dinner your husband made looks good too. Men love their meats don't they?
