Mother's Day Treats and a Few Recipes

We celebrated Mother's Day and my mom's birthday this past weekend. I thought I'd share our little table of snacks and a little box of treats I made up for my aunt and mom to take home with them. 

Yes, those plates and napkins say "princess." I thought my mom would like that for her birthday plates, and she did. ;)



We snacked on quiche, strawberries with fruit dip, Pam's pimiento cheese, shrimp dip, and lemon bars.


RECIPES:


FRUIT DIP: 8 oz. softened cream cheese mixed with one jar marshmallow cream. (I use a hand mixer to whip this up)

PAM'S PIMIENTO CHEESE: Purchased in the HEB deli. If you have an HEB nearby, this is the BEST pimiento cheese I've ever tasted and well worth the $7/lb. price. :) 

SHRIMP DIP: This is my aunt's recipe...
16 oz. sour cream
One 0.4 oz. envelope Hidden Valley Ranch Dressing Mix
Two cans tiny shrimp, drained.

Mix the dressing mix with the sour cream and fold in the tiny shrimp. Might want to make the night before to let the flavors meld together. Serve with Ruffles potato chips and enjoy! 


LEMON BARS: This recipe came from one of those recipe exchanges we used to do many years ago. Did y'all ever do that? A friend of mine started it and sent a recipe out and then we were all given addresses to send a recipe to. I got lots of good recipes from all over, but this one didn't come with a return address, so I have no way of giving credit where credit is due, but it's been my go-to lemon bar recipe for ages. 

2 cups flour
1/2 cup powdered sugar
1 cup butter
4 beaten eggs
2 cups granulated sugar
1/2 cup lemon juice
1/4 cup flour 
1/2 teaspoon baking powder

Sift together flour and powdered sugar, cut in butter. Press in bottom of 9x13 pan and bake at 350 for 20-25 min.

When it comes out of the oven, in a large bowl, beat eggs then add granulated sugar and lemon juice. Add in 1/4 cup flour and baking powder and mix well with whisk. Pour over baked crust and bake at 350 for 25 min. While hot, sprinkle with powdered sugar.

I used this Krusteaz mix for the cookies,,,



I added cream cheese frosting and pink sprinkles. 



I boxed up some lemon bars and cookies for my mom and aunt to take home...



I had a great Mother's Day. I even got to go on a little shopping spree and picked up a few clothing items. Here are a few of my treats. :) 



Do y'all see that perfume up there? It's called "Pink Sugar" and I've wanted to try it for a long time. It literally smells like cotton candy, which I'm very fond of. ;) I love it! (yes, I'm 12) 

If you decide to try it, here's a tip..The big size I got (3.4 oz) is $60 at Ulta, but I got it on Groupon for $24.99. I just checked and it's still that price. Hope everyone had a wonderful weekend!

    I love how you got your Mom the princess plates...that is just too darn cute!
    And it looks likelike you got aome good stufff there for Mothers Day :) I used to have that perfume too and loved the sweetness of it. I got some perfume too..Coco Madamaselle (Im pretty positive I just killed the name with my spelling lol)..its smells divine and reminds me of my Mom since it's her signature scent...it's mine now too haha!

  9. Happy Birthday to your mom! Your food spread looked yummy! I love lemon bars. I love how you boxed up food for them to take home in such a pretty way. Looks like a bakery did it! I laughed when you said you were 12 because you liked the cotton candy perfume. Ha!

  10. The food looks delish and I'm sure it was! I absolutely love lemon bars! Do you ever freeze them? We do that and talk about good! :) They don't freeze solid so you can just take 1 or 5 out of the freezer and enjoy. Especially good with the heat we have in the summer.
