I posted some pics of this tomato basil soup on Instagram and got a few requests for the recipe, so here it is. :)
It's so easy and good! I personally think it tastes just like the one at La Madeleine.

First, you'll want to puree 3 cans of diced tomatoes in the blender.
Wash about a dozen fresh basil leaves and set aside a cup of tomato juice. (you're going to puree these together later)
Then put the remaining 4 cups tomato juice and pureed tomatoes in 6 qt. stock pot and simmer for 30 minutes over medium to low heat. You can see I also have my butter out to soften.
After it simmers for 30 minutes, you'll want to puree the basil leaves and one cup of tomato juice (that's them in the blender above) and add that mixture to the pot, along with 1 1/2 cups heavy cream, 1/4 teaspoon pepper, and a stick of butter. Then just stir over low heat until butter and cream are incorporated. This makes about 6 bowls.
I also made homemade bread to go with our soup. Yum! The recipe can be found HERE. It makes the most wonderful bread in about 2 hours, start to finish.
This soup is so, so good!
How much you puree the tomatoes is a personal preference. We like ours pureed a lot. (my kids won't eat it if there's chunky tomatoes in it)
Just look at the butter melting on that fresh bread!
Here's the recipe:
Three (14 1/2 ounce) cans diced tomatoes
Five cups tomato juice
12 Fresh basil leaves
1 1/2 cups heavy cream
One stick butter
1/4 teaspoon pepper
Puree tomatoes in blender. Put pureed tomatoes and 4 cups tomato juice in 6 qt. pot. Simmer 30 minutes over medium low heat. ReplyDeleteI always thought tomato soup was supposed to taste like the stuff in the can (only used that for other baking). Then I had it at a restaurant and realized it could be really delicious! I've not found a recipe that compared to the restaurant version but I'm going to give yours a try. It looks and sounds delicious!! Thanks for sharing!!
ReplyDeleteI know! I always thought the stuff in the can was just how it was supposed to taste. Then I had some at La Madeline restaurant and was blown away at how good it was! I think this recipe tastes just like the La Madeline one. Let me know if you try it. :)
